360 hours. 15 days of aging. During aging, enzymes naturally present in the meat change its muscle structure, affecting texture and flavor. All three Doldam branches prepare Jeju black pork using the same aging process.
360-hour cross-aging applies to items labelled accordingly. Check each item for wet-aging, specialty cuts and Hanwoo.

Which items are cross-aged for 360 hours?
The labelled pork neck, shoulder rack, bone-in belly and corresponding sets. All three branches use the same process. Wet-aged cuts and Hanwoo are listed separately.
Where can I park?
The Yeondong Main and Jeju Airport branches are on pedestrian-only Nuwemaru Street and have no on-site parking. Use Sinjeju Public Parking and walk to the restaurant. Jungmun has on-site parking.
Can I dine late at night?
Yeondong Main and Jeju Airport: 11:00–02:00 the next day, last order 01:00. Jungmun: 11:00–23:00, last order 22:00.
